Turkey Soup

Use a leg of turkey & some wings; 

cook the day before & de-bone all meat;

 let the broth gel & scoop off the fat.

For Beef Soup,

OK to use a tough cut of meat;

Cut in small chunks,

sear in olive oil (no red will be showing)

& add at the end

Put about 1/4 cup of olive oil in the bottom layer of a soup pan,

Saute:  1 c celery, cut in larger chunks; 

also 1 c carrots; 1 c. green pepper

Don't need onion,

as use 2 packets (like come in 1 box) of

 Lipton’s Onion Soup with Beef

 

With all the water added to the soup, 

it won't be too salty

Instead of potatoes can add Orzo which is a pasta like rice. 

It is delicious & filling

Could also put in 1/4-1/2 small cabbage

Optional:  Just after adding water, 

add sweet potato sliced thin; 

 it is healthy for those trying to quit smoking

or get rid of toxins in one's body, helps prevent cancers (?)

At very end add green beans out of a can;

Or can add red beans,

kidney beans

& white beans, too; 

lots of protein & healthy for the family
